Ginger, India’s fiery root

Known in India as andraka, ginger has held an essential place in Indian culinary art for thousands of years. This knobbly rhizome reveals a warm, lemony and distinctly pungent flavour that instantly lifts a dish or a drink.

Dried and ground into powder, ginger becomes a handy everyday ally: it is measured by the spoonful, keeps for a long time and can be added without preparation. Its flavour is more concentrated and drier than fresh ginger, with a peppery note that comes through more strongly.

Ginger in Ayurvedic tradition

Ayurveda gives ginger a prominent place: it is sometimes called vishwabhesaj, “the universal remedy,” in classical Indian texts. Its nature is described as warming and penetrating, which traditionally links it to balancing the Kapha and Vata doshas.

In Ayurvedic cooking, it forms part of trikatu, the blend of three pungent spices it makes together with black pepper and long pepper. It is used just as much in curries and dals as in spiced infusions, plant-based milks and sweet preparations such as gingerbread.

How to use ginger powder

In cooking: half a teaspoon is enough to flavour a curry, a dal, a vegetable soup or a rice dish. Ground ginger is also used in baking — gingerbread, biscuits, apple or pear compotes — where its warm note pairs well with cinnamon and cardamom.

As a drink: for an infusion, pour half a teaspoon into a cup of hot water with a little lemon and honey. For a ginger shot, mix the powder with fresh lemon and orange juice. It is also added to chai and warm plant-based milks.

Suggested dosage: about one level teaspoon (2 to 3 g) per day, spread across meals. Do not exceed the recommended dose. Store in a dry place, away from heat and light, pouch tightly closed. This product is not a substitute for a varied and balanced diet or a healthy lifestyle. Not recommended for pregnant or breastfeeding women or people under medical treatment, except on the advice of a healthcare professional.
