A flour made of sweet potato, and nothing else
The ingredient list fits on one line: white sweet potato from organic farming, dried at low temperature and ground into a fine powder. No flavouring, no sweetener, no additive, no anti-caking agent.
It takes about 5 kg of fresh sweet potatoes to make 1 kg of flour. The water goes, and the carbohydrates, fibre and flavour are concentrated. That is why 45 g is enough for a plate of pancakes, and a 750 g bag makes about sixteen servings.
What 100 g of sweet potato flour provides
Per 100 g: 343 kcal, 77 g carbohydrate of which 12 g sugars, 8.6 g fibre, 4.5 g protein, less than 0.5 g fat and 0.07 g salt. Most of the carbohydrate is starch rather than sugar.
With 8.6 g of fibre per 100 g the flour is high in fibre, and it is also low in fat. Those are the only two claims its values allow, and we say no more: it is a food, not a supplement. A 45 g serving provides 154 kcal, 34 g carbohydrate of which 5.3 g sugars, 3.9 g fibre and 2 g protein.
Pancakes, crêpes, shake: the basic recipes
Pancakes: mix 45 g of sweet potato flour with 3 whole eggs, leave for two minutes and cook small pancakes in a lightly oiled pan. For a higher-protein version, Nutripure suggests 45 g of flour, 2 eggs and 15 g of whey isolate, such as the brand’s own from Nutripure. Crêpes: 45 g of flour, 2 eggs and 150 ml of plant milk.
In a shaker, 45 g of flour, 30 g of whey isolate and 150 ml of plant milk make a thick drink. If you avoid dairy, an organic plant protein does the same job, and a spoonful of cocoa powder turns it into a chocolate shake.
Replacing wheat flour, and the variety we stock
In cakes, muffins, biscuits, crêpes or shortcrust pastry it replaces wheat flour well; Nutripure recommends about 80% of the usual quantity, as it absorbs more liquid. Sweet potato is not a cereal, so the dough lacks the elasticity of a wheat dough: for bread that needs to rise, mix it with another flour. The taste is mild and slightly sweet, and goes well with cinnamon, vanilla, cocoa, but also cumin or paprika.
Nutripure makes a white and an orange variety. We stock the white one in the 750 g bag, the most versatile and discreet; the orange one has a stronger colour and taste.
Organic certification, traces, and our shop in Paris
The sweet potatoes come from organic farming certified by an independent body; the bag carries the EU organic logo and the French AB logo. According to the brand, they are grown in Africa or South America. The recipe contains no animal ingredient, but the label mentions possible traces of gluten, egg, soya, milk, fish and celery: it is not suitable for anyone who must strictly avoid gluten.
