What is fermented black garlic, and how is it made
Fermented black garlic is made from white garlic cloves (Allium sativum L.) put through a controlled ageing process, over several weeks at precise temperature and humidity, with no added yeast, bacteria or chemical additives. The transformation relies mainly on the Maillard reaction, a natural chemical reaction between sugars and amino acids that gradually changes the garlic’s colour, texture and biochemical profile — turning from white to black, with a soft texture and a mild, complex flavour with notes of balsamic vinegar and liquorice.
The most significant change happens at molecular level: the unstable sulphur compounds in fresh garlic, particularly allicin, convert into stable, highly bioavailable molecules, chief among them S-allyl-L-cysteine (SAC), considered the main quality marker of fermented black garlic. Unlike the allicin in fresh garlic, which degrades quickly and often causes digestive discomfort, SAC is water-soluble, stable over time and absorbed almost completely by the body.
