Every spring, as nature awakens, birch trees fill with a clear sap that has been harvested for generations across northern and eastern Europe. The traditional drink par excellence, birch sap marks the return of longer, brighter days. Here’s what you need to know. 🌳

What is birch sap?

Birch sap is the clear, slightly sweet liquid that flows through the tree as winter ends, during what’s known as “sap rise”. It’s harvested by gently tapping the trunk, for only a few days each year, before the leaves appear. It’s a living water, unprocessed, with a subtle, fresh taste and a faint woody note.

In terms of composition, fresh birch sap naturally carries minerals and trace elements — potassium, calcium, magnesium, manganese, silicon — drawn by the tree from the soil. It’s this mineral profile, combined with its freshness, that has always made it the emblematic drink of spring renewal.

Fresh sap, pasteurised sap or juice: what’s the difference?

Birch sap comes in several forms, which are best not confused:

False. These are two different trees and two different products: birch sap is a clear, fresh, unconcentrated water, whereas maple syrup is cooked and reduced until thick and very sweet.

2. It’s harvested in spring.

True. Harvesting takes place over a few days in late winter / early spring, during sap rise, before the leaves appear.

3. Harvesting the sap kills the birch tree.

False. When harvested properly, in reasonable quantities and with the tap hole correctly sealed afterwards, it doesn’t damage the tree, which continues its cycle.

4. Fresh sap keeps as long as a shop-bought fruit juice.

False. Unpasteurised, it’s “alive” and keeps for only a few weeks when refrigerated. The pasteurised version, however, keeps much longer.

5. It naturally contains minerals.

True. The tree concentrates potassium, calcium, magnesium, manganese and silicon drawn from the soil.

Our tips for enjoying it

If you’d like to try it the traditional way, choose fresh sap (unpasteurised) where possible, keep it refrigerated, and consume it within the stated timeframe. It’s drunk plain, chilled, in small sips in the morning. Its taste — very mild and slightly woody — is generally appealing from the first sip. As with any new food, start gently to see how you tolerate it.

Did you know? In the Nordic countries and Eastern Europe, birch sap harvesting is a springtime celebration in its own right. The trunk is tapped with a small wooden spile, the sap is collected drop by drop, and the hole is then carefully sealed to let the tree heal.
