Organic Bone Broth: Beef or Chicken, How to Use It Daily

Bone broth has long been a grandmother’s affair: bones, water, a pot and a whole day on the stove. Today, most of our customers have neither the time nor the kitchen for that, which is where ready-made or concentrated broth becomes useful. Two questions still come up constantly: beef or chicken, and how to use it without getting tired of it? Our jars and bottles are gathered on the bone broth in Paris page.

What’s really in the jar
All our bone broths come from Jarmino, a producer based in the Chiemgau region, in southern Bavaria. The beef bones come from organic, pasture-raised, grass-fed cattle, from a dozen partner farms in Bavaria and Tyrol. The chicken bones come from free-range organic farms.
The ingredient list of the concentrates fits in one line: bones, water, salt. No additive, no preservative, no flavour enhancer. The organic beef bone broth concentrate, 440 g contains 70% beef bones, and its data sheet states around 46 g of protein and 37 g of collagen per 100 g. The data sheets also mention checks for histamine and heavy metals.
Concentrate or ready to drink?
The concentrate is a thick paste that’s diluted. One heaped teaspoon, about 10 g, makes a cup of broth. A 440 g jar therefore gives 44 servings and takes up almost no room in the cupboard. It’s the most convenient format for always having some on hand.
Ready to drink is poured straight away. The 350 ml organic beef bone broth is cooked with vegetables and aromatics: tomatoes, onions, carrots, celery, leeks, parsley, bay leaf, thyme, a little cider vinegar. It already tastes like a soup. Note: it contains celery, an allergen.
In practice, we recommend ready to drink to try it out, and the concentrate once you take it regularly.
Beef or chicken: how to choose
Both are prepared the same way, and the choice mainly comes down to taste and use in cooking.
Beef has the taste of a true brown stock, slowly simmered. It goes well in stews, sauces and winter soups. It’s also available in a reduced-salt version: about 9 g of salt per 100 g compared to 14 g for the classic version, or under 1 g per serving. This is the one we suggest to people watching their salt intake.
Chicken is made from organic chicken carcasses. Like any poultry broth, it’s lighter than beef and pairs well with a risotto, a vegetable soup or a mash. The chicken bone broth concentrate, 410 g gives 41 servings; it’s also available in a 200 g jar to try.
Using it daily without getting tired of it
Bone broth isn’t just a cup in the morning. Here are the uses suggested by Jarmino, and those we recommend in the shop:
- As a hot drink: 10 g in a cup of hot water, morning or late in the day, like a light soup.
- As a cooking base: in a risotto, a mash, a sauce or a stew, in place of a stock cube.
- In a homemade soup: one spoonful is enough to add body to a slightly bland vegetable soup.
- In a smoothie or shake: less common, but some people add it to boost the protein content of their drink.
For the amount, a 10 g serving a day is the most common rhythm, and nothing stops you using more in cooking, just like any stock. And as with any broth, you can season it: a little pepper, ginger or turmeric changes everything.
Storage: the right habit
Unopened, a jar of concentrate keeps at room temperature, somewhere cool and dry. Once opened, it goes in the fridge, where it keeps for at least four months. Always use a clean, dry spoon so as not to spoil it.

Frequently asked questions
Does bone broth contain gluten or lactose?
No, Jarmino’s concentrates are labelled gluten-free and lactose-free. The ready-to-drink version contains celery: check the label if you’re allergic.
Can it be drunk cold?
According to Jarmino, the concentrate can be used hot or cold, for example in a smoothie. As a drink, it’s most often prepared with hot water, like a classic broth.
How long does a jar last?
At one serving a day, the 440 g jar lasts 44 days, the 200 g one about twenty days.
Does it have a strong taste?
It tastes like a homemade broth, with no added flavouring. If you find it too salty, try the reduced-salt beef version.
